Have you ever had the perfect, refreshing bite of sweet lemon ice cream? If not, this recipe should move this lemon cookie ice cream to the top of your must-try list. The refreshing flavor of lemon with a slight crunch of cookie will make your taste buds sing when you eat this delicious ice cream!
In our quest for different types of extract to use in our Ninja Creami ice cream recipes, Alex and I stumbled upon lemon extract. While we had used some more conventional flavors (vanilla, almond, etc.), we had never tried lemon extract.
Figuring the worst that could happen was we would have a pint of an "okay" ice cream to finish off, we bought the extract and gave it a try!
When I first thought of lemon ice cream, I thought of lemon sorbet. The light and refreshing flavor of lemon sorbet was something I loved enjoying on a hot summer day, so why not make lemon sorbet into a creamy ice cream?
This was actually one of the first flavors we tried making, as we figured it was easy to keep the same base recipe we had used in our coriander and parsley ice cream. All we needed to do was cut the spice and herbs and substitute an extract. Easy!
As the recipe title says, we decided to mix-on crushed golden Oreos to make a lemon cookie ice cream. While I think this is the best way to enjoy the ice cream, feel free to play around with different mix-ins you like!
You can't go wrong with a base as tasty as this lemon ice cream!

This lemon cookie ice cream is sure to keep you coming back for more. With the refreshing taste of lemon and a crunch of cookie in every bite, this ice cream will leave you wishing you had more Ninja Creami pints to fill!
To make this recipe in the Ninja Creami Deluxe, multiply all ingredients by 1.5
Note: 1 serving = 1 pint
Place 1 tbsp cream cheese in a medium bowl and microwave for 5-10 seconds. If the cream cheese was in the fridge, these 5-10 seconds in the microwave will help soften it up to mix well with the other ingredients.
Combine cream cheese with 1 tsp lemon extract and 1/3 cup granulated sugar. Whisk until the ingredients are mixed together.
Slowly whisk in 1 cup whole milk and 3/4 cup heavy cream.
Whisk in a few drops of yellow food coloring until the mixture is the desired color.
Pour the mixture into a Ninja Creami pint container, ensuring it does not go over the max fill line.
Freeze the pint for 24 hours, making sure it is placed on a flat surface in the freezer.
After 24 hours, remove the pint from the freezer, and plug in your Ninja Creami machine! Time for the magic.
Remove the lid from the pint and grab the Ninja Creami outer bowl. Place the pint securely into the outer bowl and cover with the lid. Once the lid is on, place the outer bowl into the machine, twisting to the right until it locks into place. Press the "Ice Cream" button and (try to) wait patiently for the creamy treat coming your way.
Once the process is finished, press and hold the button on the left side of the Creami to twist the bowl to the left and remove it from the machine. Twist the lid off of the outer bowl and remove the pint.
Now it's time for mix-ins! Carve a hole in the ice cream and drop in crushed golden Oreos. Place the pint back into the Ninja Creami machine and select "Mix-In".
Now your lemon cookie ice cream is ready to enjoy!
If you don't like following recipes, don't worry - you can customize it however you want! We personally use oat milk and coconut cream to avoid most of the dairy, and it's some of the best ice cream we've ever had.
