During the fall, there's nothing better than sitting around a campfire making s'mores with family and friends. Besides the great time with friends and family, there's just something about roasting marshmallows over a fire and eating them with chocolate and graham crackers.
But, we didn't make a recipe for s'mores ice cream; we wanted to make something a bit more interesting.
That's why we took the idea of roasting marshmallows over a fire and turned it into ice cream: toasted marshmallow ice cream (one of my new favorite Ninja Creami ice cream recipes)!
This recipe actually does require fire, so be careful when cooking! Since it's wintertime where we live, we decided to use a handheld candle lighter instead of an actual fire.
However, by using actual fire, we were able to get such a great toasted marshmallow flavor into the ice cream. You may be able to simply roast them on a stove-top pan, but I don't think it would provide the same level of flavor as using real fire!
Toasting marshmallows and prepping them does require a bit more time, so this recipe takes a little longer than the typical 10 minutes of prep and cooking time. But I promise, the flavor of this toasted marshmallow ice cream is completely worth it!
Even if you don't like marshmallows (like me), give this flavor a try! If a non-marshmallow-lover like me loves this ice cream, maybe you will too! So break out your ice cream ingredients and make this new, delicious Ninja Creami recipe!

Toasted marshmallow ice cream brings the flavor of an over-the-fire roasted marshmallow to ice cream! By using actual roasted marshmallows, this ice cream tastes absolutely delicious.
To make this recipe in the Ninja Creami Deluxe, multiply all ingredients by 1.5
Note: 1 serving = 1 pint
Place 1 tbsp cream cheese in a medium bowl and microwave for 5-10 seconds. If the cream cheese was in the fridge, these 5-10 seconds in the microwave will help soften it up to mix well with the other ingredients.
Combine cream cheese with 1 tsp vanilla extract and 1/3 cup granulated sugar. Whisk until the ingredients are mixed together.
Use a handheld candle lighter to char the outside of 7 big marshmallows. Marshmallows should have visible blackened char on the outside.
Once the marshmallows have cooled, grab the charred outside of each marshmallow and pull it off. This will separate the charred outer skin of the marshmallow from the inside of the marshmallow.
Place the insides of the marshmallows in a small bowl and microwave for 15 seconds. This will soften them so they will mix evenly.
Add the microwaved marshmallow insides into the cream cheese/extract/sugar mixture. Whisk until combined.
Finely chop the charred outsides of the marshmallows. Try to make them as small as possible, as these will incorporate the great toasted flavor into the ice cream base.
Add in the chopped charred marshmallow pieces to the mixture and whisk until thoroughly combined.
Slowly whisk in 1 cup whole milk and 3/4 cup heavy cream.
Using a mesh strainer, strain the mixture to get out all of the large charred marshmallow pieces.
Finely chop the charred marshmallow pieces that were strained out. After chopping, whisk them back into the mixture.
Pour the mixture into a Ninja Creami pint container, ensuring it does not go over the max fill line.
Freeze the pint for 24 hours, ensuring it is placed on a flat surface in the freezer.
After 24 hours, remove the pint from the freezer, and plug in your Ninja Creami machine! Time for the magic.
Remove the lid from the pint and grab the Ninja Creami outer bowl. Place the pint securely into the outer bowl and cover with the lid. Once the lid is on, place the outer bowl into the machine, twisting to the right until it locks into place. Press the "Ice Cream" button and (try to) wait patiently for the creamy treat coming your way.
Once the process is finished, press and hold the button on the left side of the Creami to twist the bowl to the left and remove it from the machine. Twist the lid off of the outer bowl and remove the pint.
Now your toasted marshmallow ice cream is ready to enjoy!
If you don't like following recipes, don't worry - you can customize it however you want! We personally use oat milk and coconut cream to avoid most of the dairy, and it's some of the best ice cream we've ever had.
